Lemon and yogurt covered cherries cookie

Ingredients:

• ½ cup butter at room temperature
• 1 egg
• ¼ cup sugar
• ¾ cup brown sugar
• 1 teaspoon vanilla
• ¼ cup flour
• ½ tsp. baking soda
• 1 teaspoon baking powder
• ½ teaspoon salt
• ¾ cup yogurt covered cherries
• ½ teaspoon Lemon extract (or 2 tablespoons lemon juice)
• 1 tablespoon lemon zest

Preparation:

1. Preheat oven to 175 ° C (350 ° F) and place the rack in the center.
2. Grease 2 cookie sheets.
3. Mix the butter with the sugar and the brown sugar with an electric mixer. Add the egg, extract and lemon zest. Mix until homogeneous.
4. In another bowl, sift flour, baking soda, baking powder and salt, and stir in the butter mixture.
5. Cut the Croque Cerise Yogurt covered cherries in 2 or 4 pieces and add to the mix using a spatula.
6. Roll dough into 4 cm (1 ½ inches) balls and place them on the cookie sheets, leaving a space between each.
7. Bake for about 9 minutes or until golden around the edges.
8. Let the cookies cool down and enjoy.
