Lemon and Yogourt Coated Cherry Cookies

Délicieux biscuits citron et cerises séchéees dans le yogourt Croque Cerise


Ingredients:

1/2 cup butter at room temperature1 egg1/3 cup sugar3/4 cup brown sugar1 tsp vanilla 1 cup flour1/2 tsp baking soda1 tsp baking powder1/2 tsp salt3/4 cup cherries coated in yogourt1/2 tsp lemon extract or 2 tbsp lemon juice1 tbsp lemon zest

 

  1. Place the rack in the centre of the oven and preheat to 175 °C (350F °F).
  2. Grease 2 cookie sheets.
  3. Cream the butter with the sugar and brown sugar with an electric mixer. Add the egg, the essences and the lemon zest. Mix until well blended.
  4. In another bowl, sift flour, baking soda, baking powder and salt and blend into butter mixture.
  5. Cut the cherries coated in yogourt into 2 or 4 pieces and add to the mixture using a spatula.
  6. Shape into balls of about 1 1/2 inches and place them on the cookie sheets, leaving a space between each.
  7. Bake for about 9 minutes or until the edge begins to brown.
  8. Let the cookies cool and enjoy.
